These healthy cereal bar cookies are so good for grab and go! The entire family will BEG you to make …. be sure to double ( or even triple the recipe) they are THAT good!
Healthy Cereal Bar Cookies
Ingredients:
- 1 cup oats (ground in a food processor)
- 1 cup almond flour
- 1 cup melted coconut oil
- 1 cup GF cup for cup flour (or whole wheat flour)
- 1 cup maple syrup (or preferred sugar substitute)
- 1 tsp vanilla extract
- 1 1/2 cup low sugar strawberry jam
Directions:
- Mix all the ingredients except the jam, together in a large bowl. It is easiest to mix with your hands.
- Spray two muffin pans or line with wrappers. I prefer wrappers as they can be hard to get out.
- Divide the dough into two. Take half of the dough and fill the muffin pan. It’s about a tablespoon for each.
- Top each cookie with 1 tsp of jam.
- Follow with a second layer of dough/cookie batter.
- Bake for 15-20 minutes at 350 degrees. Enjoy!
Tips:
- I did not grind the oats in the food processor ( call me lazy ) and they turned out great!
- I used Agave syrup as the sweetener – and used a bit more than called for – I like things a bit SWEET!
